Summer potato salad

// I’m at our summer cabin with my new puppy, mom and moms dog Billy (who is 10x the size of the puppy) 🐶. I’ll show more of him later. It’s sunny and rainy and everything at once, and I love making lighter and more fresh food in the summer! So I thought I would share today’s lunch recipe as we both couldn’t stop eating even though we thought we had made enough for lunch and dinner at once.

Summer salad

For the dressing:

  • Honey/maple syrup

  • Salt

  • Pepper

  • 1/2 orange

  • Mustard

For the salad:

  • 4 potatoes

  • 2 onions

  • 1 pack of snow peas (sukkererter)

  • 1/2 avocado

  • Cherry tomatoes

  • Sweet pepper (søt paprika)

  • Sundries tomatoes

  • 2 carrots

  • 2 apples (preferably organic)

Kok potetene i 20 minutter.

// Boil the potatoes for 20 minutes. Add sliced onion after 10 minutes and let them boil for 10. Chop the tomatoes, pepper, avocado and sundries tomatoes. Grate the carrots. Once the potatoes and onions are finished, cut the potatoes and toss everything into a bowl. Add honey/maple syrup, salt, pepper and squeeze half the orange to taste. Add some mustard if you like. Enjoy 🌼

How to use aloe vera and 6 health benefits

The aloe vera plant grows in the gardens here in Portugal and it's just so pretty. Even more, it's a really versatile plant with so many benefits it should definitely win an award. In the northern countries where it's too cold to grow, you can buy it in health stores or online here and here. Aloe vera has been used in skin products forever, for good reasons. The sticky gel inside the plant contains around 96% water, protein, and vitamin A, B, C and E (1).

Aloe vera benefits

  1. It can help you with skin issues such as sunburns, scars, and cuts by just applying it directly
  2. It is anti-inflammatory which means that if you eat or drink aloe vera it may help with IBS or other digestive issues.
  3. If you struggle with constipation or bloating you can take one shot aloe vera each morning on an empty stomach and most likely you will notice the difference. Or, you can do like us and make a smoothie!
  4. It can help you against hair fall because it protects and repairs the skin on the scalp!
  5. It is said to aid you in reducing acne
  6. Mix it with some sea salt, and you have an amazing scrub that will leave your skin feeling baby soft

 Aloe vera smoothie

(1 portion, 5-10 minutes)

  • 1 dl raspberries
  • 1/4 mango
  • 2 frozen spinach cubes
  • 1/2 avocado
  • 1/2 cup aloe vera cubes
  • 1 dl almond milk

Mix it all together and top it with your favorite toppings. Here pictures with raw cacao, granola, and coconut flakes.

Açaí smoothie bowl

Açaí berries are originally from the wild Amazon, and they are small powerhouses of nutrients and energy. We both completely fell in love with this taste after spending time in Brazil, and have been trying to reconstruct the same taste at home. Açaí is very high in antioxidants and has a whole array of health benefits such as containing zinc, copper, manganese, and magnesium. You can make açaí bowls in many different ways, and this smoothie is great for breakfast or after a surf session or workout. It's a bit bigger and less sweet than the bowls you can buy at the beach in Brazil, but it's still really good, although it makes you miss the sunshine.

Açaí smoothie (2 portions, 10-15 minutes):

  • 1 handful steamed and frozen cauliflower
  • 1/4 avocado
  • 1 dl raspberries
  • 1 organic açaí packet
  • 1/5 handful frozen spinach
  • 1 dl mango or papaya

  • 1 tsp maca powder
  • 1 tsp raw cacao powder
  • 1 tsp spirulina powder

Blend it all together and top your smoothie with your favorite toppings! Yumyumyumyumyumyum. We topped ours with a granola (recipe is soon to come), coconut shreds, cacao nibs, hemp seeds, Brasil nuts, pepitas and almond butter.Açaí packets or powder can usually be bought at health stores. We definitely recommend the packets, as long as they are 100% açaí, and not full of additives. We bought ours at Celeiro here in Portugal, and have seen them at Økohjertet, Life and Røtter in Oslo.

Nourishing white bean salat with creamy tahini dressing

SAMSUNG CSCBring out the wine, it's white bean time. They may not be the prettiest ingredient on earth but they taste delicious and are packed with calcium. If you don't drink milk (hey vegans) then beans are great to eat to get your daily dose of calcium. It's actually recommended that you eat around 1000mg calcium a day (1), so if you eat some kale for breakfast, beans with tahini for lunch and almond butter for a snack then you are good to go.Bean salad with tahini dressing

    • 1 can white beans (organic)
    • 2-4 dl buckwheat (boiled)

1 avocado

  • 1 handful sundried tomatoes
  • spinach
  • 1 tbs tahini
  • 1/2 dl juice of lemon
  • 1 tbs olive oil
  • salt and pepper

Start by boiling the buckwheat (check out how to do that here). Chop up the avocado, sundried tomatoes, and spinach and place them on your plate. When the buckwheat is ready and cooled of add this as well. Open a box of white beans and be careful to rinse them off really well and add them to your place. Lastly mix the tahini, lemon juice, and olive oil together in a bowl and drizzle it over your salad. Finish with salt and pepper.SAMSUNG CSCSAMSUNG CSC

Beetroot burgers

Veggie burgers are definitely here to stay, and we have tried many different types. This one is delicious and juicy, entirely vegan, and is best enjoyed with loads of toppings. Guacamole, hummus, red pesto and a good olive oil are some suggestions, and preferably a big pile of sweet potato fries!10 burgers:

  • 50 gram flax seeds
  • 1 dl flour (we used gluten-free Jyttemel)
  • Three large beets
  • 2-3 tbs water
  • A pinch of salt
  • Fresh coriander
  • 1 tbs cumin
  • 1/2 tbs chili powder (or. fresh chili)

Let the flax seeds soak in some water for a bit. They are used to hold the dough together (also called flax egg) instead of using eggs. You can also use chia seeds or eggs if you prefer that. Add the beets to a food processor and chop it into smaller pieces. Mix all ingredients in a bowl. Form the mass into burger sized pieces, and fry them in a pan until they are crispy on the outside, and warm all the way through.Enjoy!SONY DSC SONY DSC

Healthy, tasty and hip - Surf Kombucha

Have you ever wondered what the deal with kombucha is all about? This week we talked with the inspiring people behind the brand Surf Kombucha, which is a Norwegian based brand of fermented tea. Surf Kombucha is actually brewed on a peninsula in Norway by a nutritionist and a surfer. What is not to love?!Hi guys! Who are the people behind the brand?Nutritionist Maren Aasen from Norway, and my boyfriend and surfer Luca Guichard, who is half Norwegian, half French, but grew up in Portugal. Can you tell us the story behind the name Surf Kombucha? We wanted to reach out to young people who maybe didn't know about fermenting and kombucha, and hopefully, would like it and think it was cool, and a nice replacement for soda and other unhealthy sugared drinks. We wanted the name to reflect youth, fresh and being sporty. When we were visiting Hawaii for kombucha inspiration, we sat on the beach and discussed name options, and Luca suggested Surf Kombucha... and yes, that was exactly what we were looking for; young, fresh, cool and sporty! What is Kombucha actually and why is it good for us?It's a fermented tea, which is a 2000-year-old tradition. And because of the lactic acid bacterias, that's naturally in kombucha, it's good for the intestines and your digestion. So you have a healthy, good drink with very little sugar, natural ingredients and good bacterias for the stomach. Why did you decide to make your own kombucha brand?I heard about kombucha for the first time in nutrition class, and later on a holiday in California, we saw how popular it was over there. We both got hooked on this drink and loved it from the first sip. We saw a market for this in Norway too, so decided to give it a try. What are your hopes and dreams for the company? Our dream is to be the biggest and best kombucha producer in Norway and to eventually export it to Portugal (where we want to live) and other counties. What is the best and worst thing about being an entrepreneur? The best is to be your own boss, and that you can decide when to work and when not to. The worst is that you are always at work, even when you have time off. What are your top three tips for a healthy and sustainable lifestyle?

  1. Do something that lights the fire in you and keeps you going
  2. Be with people that make you feel good
  3. Feed your body with the best food you have access too as often as possible
  4. Sleep good and stay active… but that was one too many ;)

We love and highly recommend this delicious fizzy drink! Follow Maren, Luca and Surf Kombucha on Instagram, and check out their homepage here, and subscribe to Maren's Youtube channel.                     Surf Kombucha can at the time being only be bought in Norway, but stay tuned! Ginger tofu wok with soba noodles and tamari

This meal is super easy for those busy everyday evenings when you are craving something warm and filling. It is a great pre- or post workout meal, because of the proteins in the tofu and all the lovely nutrients. What is actually tofu?Basically, tofu is made the same way regular cheese is made from cows milk, and was "invented" in China for thousands of years ago. It is dense in nutrients such as kalsium, magnesium and vitamin A, and contains a lot of protein (approx. 13 grams per 100). There is a large ongoing discussion on whether or not tofu is healthy for you, based on the fact that loads of the tofu you can buy comes from gene modified soybeans. If you are in doubt, a little research on the field gets you a long way. Therefore you need to make sure to buy an organic tofu. Luckily, most of the tofu that is bought in the Nordics (from Nordic producers) comes from organic farms in Europe - and not from the rainforest (Mari Hult - vegetarbloggen).Ginger tofu wok with soba noodles and tamari(2 pers)

  • Ca. 75-100 gram soba noodles per person
  • 1 package of tofu - organic(!). We recommend Urtekram
  • 1 red pepper
  • 1/2 zucchini
  • 1/2 eggplant
  • Tamari
  • 1 small piece of ginger
  • Salt and pepper to taste

Boil up water for the soba noodles. Slice the zucchini, eggplant and pepper in sizeable bites, and wok them. Chop the ginger in small pieces. Slice the tofu in squares, and add the ginger and some tamari in a bowl, and marinate the tofu for some minutes. When the tamari has soaked in a bit, heat up a pan and fry the tofu so it gets a nice crust. When the water is boiling, add the soba noodles and let them boil for about 6-8 minutes. When its done, rinse it properly in cold water, and then add it to the pan of fried tofu to heat it up again. Serve everything in a bowl, and maybe add some more tamari and some herbs to finish it off.ENJOY!

Pink soup

This soup is great for fall and is very tasty and nourishing. Beets are a great source of B vitamin, maganese, copper, magnesium, potassium and iron. Beets are also a great assistant in detoxing the liver, so this soup is perfect if you need a boost!  The ingredients in this soup are in season, which means that they not only taste their best right now, but it is also a more sustainable choice since they probably grow on a farm near by or at least in the same country.Ingredients

  • 2 large beets
  • 1 sweet potato
  • 1 fennel
  • leek
  • coconut milk

Start by pealing the sweet potato and the beets and place them in the oven at 180 degrees for about 45 minutes. Chop up 1 leek and 1 fennel and sautè both on low heat until they are soft. Cauliflower rice and chili carrot sticks with hummus

This combination makes a perfect light lunch or dinner, and it doesn't take too much time to make. While the carrots are frying in the oven, the rest of the meal can be prepared, and everything will be done and warm to serve at the same time. During the summer it usually feels nice to enjoy some lighter meals that don't call for a nap afterwards since there is a lot going on. Also, it's good to be able to make a dinner with only a few, cheap ingredients that you can get in any type of store.Cauliflower rice and carrot fries with hummus (2 people):

  • That it is a complete protein, and has almost as much protein as a steak
  • That it's packed with healthy fats, minerals and vitamins
  • Thats it's naturally gluten free, and therefore more tummy friendly

It is a type of seed from the quinoaplant which exists in both red, white and black. The plant is super robust, and can handle temperature fluctuations between -4 and 38 degrees, and it can be grown until 4000 meters above sea level (NRK). The UN declared 2013 to be the international quinoa year, because they wanted to raise attention to the indigenous people's amazing ability to maintain quinoa in its natural form for future generations through ancient cultivation methods, and traditions such as living in harmony with nature and not destroying it. In addition, it has been discovered how quinoa gives opportunities to feed populations in countries where the access to food is poor (FAO). Eat more raw chocolate

Most of us have good associations with chocolate. It's a really good thing to enjoy with friends. Or just by yourself. Luckily, eating healthier doesn't have to mean giving up chocolate. If you choose the right one, it can actually really benefit your health. The difference between the "good" and the "regular" types are the ingredients and how it has been produced. "Regular" chocolate contains milk or milk powder, refined sugar and often lots of additives.
What is raw cacao?
Cacao is called raw when it's not been heated above 41 degrees. All the nutrition is still intact, which is why this is more beneficial for us. Raw cacao is one of nature's strongest antioxidants.
  • Raw cacao mass (that we can make our own chocolate from) is cacao beans pressed at a really low temperature. The cacao butter is not separated, as it is in raw cacao powder. This means that cacao mass is a little less bitter than cacao powder.
  • Raw cacao powder is what's left when you separate cacao butter fra cacao beans, and pulverise it.

How do you use it?Raw cacao can be used to make a good cup of hot chocolate, brownies, see our recipe (here), homemade chocolate, chocolate mousse, in granola, in smoothies, milkshakes, chocolate chia porridge, etc. You can also use it in cooking such as for adding extra flavour to chili con (or sin) carne. For more inspiration, see more recipes here.

//Hva er rå kakao?

For mer inspirasjon, se flere oppskrifter her. SONY DSCDid you know that raw cacao:

  • Contains more antioxidants than blueberries and wine?
  • Contains up to 7 times more antioxidants than "regular" dark chocolate?
  • Is the food with highest level of magnesium of all foods, and that this mineral is nr. 1 for a good heart function?
  • Contains a substance that we also release when we're in love (PEA)?

 Visste du at rå kakao:

SONY DSCSONY DSC

Health boosting green juice and 4 super benefits

In case you are wondering why everyone is all about juicing these days we are going to try to give you a short explanation. First of all, it's delicious. The right mix gives you an energizing boost in the morning.

What's the bonus?

  1. Vegetables have an alkalizing effect on the body. Many people have a diet that creates acid, which we have written about in this post. Leafy green veggies contain chlorophyll which is detoxifying and alkalizing (1).
  2. By drinking it on an empty stomach in the morning, you get concentrated vitamins, minerals, and enzymes that enter quickly into the blood. AKA you get the benefits much quicker than if you were to eat the veggies.
  3. The digestion gets to rest while giving your body an energy boost - YAY
  4. It can give you clearer skin, and work more efficiently than expensive skin care products

Så hva er bonusen?

Green juice

(2 portions)

  • 1 organic cucumbet
  • 1 organic apple
  • 3 chunks of celery
  • 1 lemon
  • Spinach
  • Ginger

We recommend that you choose organic cucumber and apple, as they have thin skin, making them more prone to contain pesticides and other toxins from non-organic farming. The Environmental Working Group have made an overview of how to choose organic vs. non-organic produce. You can also add a variety of other fruits and veggies in this juice, the most important is to have veggies as over half of the ingredients. What about adding some broccoli? :-)

Grønn juice

(2 porsjoner)

  • 1 økologisk agurk
  • 1 økologisk eple
  • 3 stilker stangselleri
  • 1 sitron
  • Spinat

For eksempel brokkoli :-)

Blackberry smoothie

Food is so much more than just something to satisfy your hunger. Take for example this smoothie that contains so many super health benefits!Turmeric is surprisingly one of the most nutritious spices you can find. It has been found to work anti-inflammatory and can prevent your body from cancer and other diseases. For ages, it has been used against digestive issues, cramps, liver problems, high cholesterol, and various skin diseases. Spinach contains loads of carotenoids which are transformed to vitamin A in the body, aiding your vision and skin. Antioxidants in the spinach can reduce the risk of heart disease by protecting our cells. In the berries, in addition to loads of vitamins, you get pectins (a type of fiber), that helps the food pass smoothly through the tummy.SAMSUNG CSC
